Consistent cooking is a terrific formula for turbulent economic times. No one does it better than bistro maestro Pignolet and his team who have the ‘wish-I-were-in-Paris’ night out down pat. The barrel-vaulted ceiling and striking black and white mural set the scene for the eastern suburbs set to relish smart, finessed French fare. The crab omelette is a signature, so too the velvety house-cured salmon. Soufflés, whether sweet or savoury, rise to perfection, and simply plated steaks sizzle with various trad Gallic butters, while the accompanying frites keep the faith. It’s easy to see the appeal of Pignolet’s pitch that delivers sophisticated comfort food with flair rather than flamboyance. The ‘single course plus glass of wine’ notion is not frowned on here, which suits the loyal regulars at this first-in-best-seated favourite. Queues can form from six, especially on Sundays.
