The previous winner of Gourmet Traveller’s Restaurant of the Year is not resting on its laurels. The dark-hued, sexy room is wearing well, while service still vies for best-in-city status. The wine list’s solidly grounded quirkiness matches both the room and the brilliantly conceived food that balances artfulness and whimsy with a true understanding of flavour and nourishment. Smoked and raw tuna share a plate with pale avocado cream, vibrant slow-cooked octopus and sweetly tangy pickled cucumber, while a poached chicken mixes it with silky-smooth foie gras parfait and crunchy toasted quinoa. There’s a Middle Eastern lean to the saddle of lamb with its smoky eggplant and spiced carrots, while desserts, such the violet ice-cream with sour cherries and clove meringue, can silence a table with their ethereal combination of texture +-and flavour. This is truly one of Australia’s must-do experiences.
