Hi all,

I'm new to this forum and this is my first post.
I'm in the process of buying some quality pans and have my heart set on de Buyer mineral range of pans, originally made in France. The problem is I can't seem to find any in Sydney in order to purchase them. After emailing the head quarters in Paris they told me that they do not ship to individuals overseas but that I can look at a US website that does. And yes, that works..however the shipping cost is half of the overall price...and it isn't cheap.

I then asked if they had distributors in Australia and found two - Tomkin and Hospitality Warehouse. The problem? Tomkin does not have the Mineral range (pans made from 99% iron) and the hospitalitywarehouse.com.au sells them in batches of five and they do not have a physical site where one can go and have a look at these things. And no, you cannot buy them individually from there either.

I guess my question is whether anyone here knows of any places in Sydney that might sell this brand of pans on an individual basis and if they've bought them before what kind of experiences you've had?

Sorry for the long post everyone...

Hi,
I have De Buyer pans and I love them, they have wonderful thick bases and even heating.
I purchased mine, individually, from The Essential Ingredient (Albury Store) though I'm sure one of your Sydney Essential Ingredient stores would stock them or would be able to get them. I mean Albury is able to order for me if they don't have something I want.
However, I am unsure on the mineral part. I thought mine were just stainless steel, but who knows!

Good Luck!

Hi Beeswax.

I have a de Buyer 26cm Carbone Steel Lyonnaise frypan I bought from a professional cookware store in Paris. It is the preferred choice of many chefs there. I would thoroughly recommend it. It is 3mm thick. The steel starts out a dull silver colour and goes black over time. It must be oiled, developing a patina, and if used correctly provides fantastic cooking results. Just don't expect to put it in the dishwasher as you might stainless. But the efficacy of use is worth it. Wonderful even heat. Superior for browning onions, etc, etc.

Only point I would add is that it is 1.85kg empty weight. If you are strong wristed you may prefer the 28cm size, but I suggest you do a test with your existing frypan and add/remove some weight and see how it feels.

Not sure what qualities the mineral range has that you are seeking?

If you have no luck on the mineral range, and are interested, I would split a pack of the above 26cm carbone pan with you from the wholesaler you mentioned. [Every visitor who tries mine wants one] I could take three, four at a pinch. [0403 800 300] Would still be lots cheaper than retail at say Essential Ingredient.

If you make pancakes a crepe pan is a handy addition too.

I sell De Buyer pans in my store here in Sydney - chef and the cook in camperdown. A lot cheaper than essential ingredient by the way. the range you are enquiring about is not available but I can generally source any product you need, although you will appreciate there will be a considerable delay in shipping from france. Please let me know the item details or a link to the website and we can indicate an approx price. We sell the Carbonne steel pans lalmagpie is writing about and they are sensational to use. we are having a demo with them on Saturday 14th 11.30 if you would like to test drive them. thanks Michael
