"This is an apéro that could transport you to a Tuscan hilltop or the shores of Jerez, depending on your mood," says Tara Garnell, manager of Original Sin, the newish north-east London offshoot of the world-renowned cocktail haunt Happiness Forgets. Build 40ml Cynar, 20ml manzanilla Sherry, 10ml lemon juice, 2.5ml cane syrup (a syrup made with demerara sugar will work nicely, too) and 2 dashes of orange bitters in a highball glass, add ice, top with Fever-Tree Mediterranean tonic, garnish with a long strip of orange peel and serve.
