Build 40ml Cynar, 20ml manzanilla Sherry, 10ml lemon juice, 2.5ml cane syrup (a syrup made with demerara sugar will work nicely, too) and 2 dashes of orange bitters in a highball glass, add ice, top with Fever-Tree Mediterranean tonic, garnish with a long strip of orange peel and serve.
