Need a dose of Latin fire to warm the cockles this winter? The Lobo Plantation, an atmospheric Caribbean basement bar in Sydney named for Cuban sugar baron Julio Lobo, has your prescription ready. "We've combined rum and rye for a layer of complexity, then a touch of rich sugar, bitters and orange zest for balance," says Lobo's manager Mary White. "It has sweet, spice and everything nice." Just what the doctor ordered.

Combine 30ml rum, 30ml rye whiskey, 10ml demerara sugar syrup (two parts demerara sugar dissolved in one part hot water), three dashes of Angostura bitters and two dashes of Angostura orange bitters in a tumbler with ice. Stir well, garnish with orange peel and serve.
