Hot, sour, salty, sweet - welcome to Embassy XO. Upstairs, it's all dark timber, soft lighting and louvred glass overlooking the treetops. Chef Brendon Barker cut his teeth at Melbourne's Ezard and shows a deft hand with Asian favourites - subtly flavoured potsticker pork dumplings hit the mark, crisp-bottomed and enlivened with lime and chilli sauce. But let's not stop there. Beef cheeks braised in soy and rock sugar with black bean sauce and notes of fragrant star anise are gloriously gelatinous. Barker turns a wokful of greens into something special, too, with house-made oyster sauce. And it gets better. Steamed chocolate buns are silky soft to the touch and filled with molten chocolate. A dunk into raspberry chilli sauce completes the picture. The Embassy XO wine list will not leave you wanting and staff are well equipped to advise on pairing.
