AA Gill's final column for Gourmet Traveller

Coconut crab and green mango salad

"This salad bursts with fresh, vibrant flavours and became a signature on my Paramount menus," says Christine Manfield. "I capitalised on using green mangoes in many dishes as they became more widely available. Blue swimmer crabs from South Australia have the most delicious sweet meat. It's best to buy them whole, cook them yourself and carefully pick the meat from the shell - a tedious task but it gives the best flavour. This entree also works well with spanner crab meat (you can buy this in packs ready cooked from reliable fishmongers). The sweetness of the crab, the richness of the fresh coconut and the sourness of green mango make a wonderful partnership. It's all about harmony on the palate and using the very best produce."

Sydney-based stylist Jason Grant believes that any space can be beautiful, regardless of its imperfections. The interiors in his new book, A Place Called Home, are a case in point - a fresh and sunny mix of modern casual with a hint of nostalgia.

Always be on the lookout
"I'm inspired by all kinds of interiors. Take a look around your favourite café next time you're waiting for a coffee. I love bentwood chairs, rustic timber tables, vintage cutlery, enamelware, mix-and-match dinnerware and colourful appliances." says Jason Grant.

Be your own stylist
"Fill your shelves with precious things that have a story," says Grant. "Clever storage doesn't just mean hiding your possessions; it's about editing what's on show and only putting away what doesn't work in the display. Brightly painted reclaimed timber crates make great storage and kitchens always cry out for colour."

Renounce perfection
"I don't believe we need to create 'perfect' homes. Instead, they should be full of things that mean something to you," says Grant. "The most inspiring places I've styled have been relaxed, casual and have a good energy. They weren't just filled with designer furniture; they were filled with heart and soul."
