David Thompson is the next chef to partner with Lennox Hastie in Firedoor's dinner series.
Long Chim's David Thompson will join Lennox Hastie in cooking over coals at a one-off dinner at Firedoor on 20 March. The two chefs will create an eight-course menu as part of the restaurant's Fireside dinner series that strikes a balance between Thompson's Thai expertise and Hastie's signature wood-fired dishes. Hastie uses over 13 different Australian woods in Firedoor's grills to season his dishes with the smoky flavours of different coals.
Thompson and Hastie will serve up a formidable jungle curry with a Firedoor twist, an omelette wrapped in banana leaf and hot from one of the restaurant's four grills, and an ash-baked coconut dessert with jackfruit custard. Each course will be served with matched wines.
Peter Gilmore appeared at a Fireside dinner last August, with more chefs due to be announced as part of the series. Tickets are limited to 50 people.
