Bubble & Squeak at PS40

Sydney bar PS40 goes full British this week as chef Jake Dolin matches a special menu to limited-edition cocktails.

To celebrate World Class Cocktail Week this week, Sydney bar PS40 is hosting Bubble & Squeak, a three-day British-themed takeover with the help of UK expat Jake Dolin, junior sous-chef at Rockpool Bar & Grill. Launching today and running for three days, Dolin's UK-inspired bar menu spans finger sandwiches, Eton mess, Hiramasa kingfish cured with gin and PS40's Bush Tonic, and a ploughman's share plate, while PS40 co-owners Thor Bergquist and Michael Chiem have crafted a cocktail list to match.
Bubble & Squeak kicks off on 10 May. The tight menu of five creative cocktails includes the likes of Peas & Carrots, an Earl Grey-heavy creation called Tea + Crumpets featuring a limited-edition PS fermented crumpet soda, and a revival of the Pimm's Cup. Dolin's menu offers snacks like pork scratchings and Welsh rarebit, and larger share plates of pig's head terrine and bubble and squeak croquettes with house-made mustard.
The British-themed drinks and snacks include a revised Pimm's Cup and cucumber sandwiches.
Dolin, a long-time friend of the bar's owners, provided valuable menu advice when Bergquist and Chiem first opened. The young chef has spent the past five years at Rockpool Bar & Grill; before that, he spent time at Arbutus and some of Jamie Oliver's restaurants in the UK.
"Basically he'll be focusing on British food but executed with the Rockpool philosophy of simple dishes, focusing on good-quality produce," Chiem says.
