No stranger to working at the very top of the game after years as Joël Robuchon’s right-hand man in Paris, Guillaume Brahimi hit the ground running when he arrived in Australia and has never looked back. With Guillaume at Bennelong, he found acclaim making a success of the hitherto difficult restaurant at the Sydney Opera House, and with 2008’s Bistro Guillaume at Crown, he has brought a new, very polished take on French bourgeois classics to Melbourne.
