Working with the likes of Peter Doyle, Luke Mangan and Matthew Moran, Emma Knowles saw plenty of the cutting-edge of Sydney restaurant dining before finding a new calling creating recipes and styling food for the world's best food magazines - a role she continues to pursue as food director of Gourmet Traveller. For her session, Emma is channelling her pastry chef background to demystify soufflés (both with fruit and chocolate) as well as a seasonal fruit financier tart.
