A favourite competitor on TV's Ready Steady Cook, New Zealand-born Jared Ingersoll spends much of time off-air championing elegantly simple food made with care from the best locally sourced products at Danks Street Depot in Waterloo. Seafood is the subject of Jared's Gourmet Institute session, and will be explored vigorously in demonstrations of kingfish "pastrami" with tea-smoked oysters, barbecued cuttlefish and pancetta with fried zucchini dressing and black ink pasta with cuttlefish, chilli and garlic.
