Harvey Norman Gourmet Institute 2009: your chance for exclusive access to Australia's top chefs. Justin North honed his talents with Michelin-starred UK chef Raymond Blanc and ran the lauded Banc restaurant in Martin Place under Liam Tomlin before striking out and opening Bécasse in Surry Hills in 2001; a move to grander CBD premises in 2005 lifted Bécasse to the ranks of the city's finest. Justin's reputation for detail work will be on show as he goes over the finer points of pastry work with a savoury shortcrust Catalan tart and a sweet pâte sablée base for a blind-baked pear tart with caramel sauce and ice-cream.
