Harvey Norman Gourmet Institute 2009: your chance for exclusive access to Australia's top chefs. A gentleman chef, Michael Moore has worked everywhere from Terence Conran's London culinary powerhouse Bluebird to Sydney's Bennelong, Wildfire and Prunier's. Heading the kitchen at The Summit, Michael has reinvigorated the menu with produce-driven dishes of great aplomb. Beef, the focus of Michael's session, is one of the restaurant's hallmarks, as his demonstrations of Black Angus medallions with salsa rosso and sweet onions and seared sirloin with roast onion jam and Béarnaise sauce amply show.
