Honey and Thyme Daiquiri
You’ll need to begin this a day ahead.

Honey and Thyme Daiquiri

15 ml

lime juice
|

10 ml
|
honey and thyme water (see note)
|
|
½
|
fresh fig
|
|
60 ml (¼ cup)
|
rum (see note above)
|
|
To garnish:
|
sprig of thyme
|

Muddle all ingredients except rum to a bar glass or shaker.

Add rum and ice cubes to shaker, shake hard and fast, then strain into a coupe or martini glass. Float a sprig of thyme to garnish and serve.

Note For honey and thyme water, dissolve honey in an equal amount of hot water. Add a few sprigs of thyme and steep overnight to allow the thyme flavour to infuse.
