Honey and Thyme Daiquiri

Honey and Thyme Daiquiri

You’ll need to begin this a day ahead.

Honey and Thyme Daiquiri

Serves 1
15 ml   lime juice
10 ml   honey and thyme water (see note)
½   fresh fig
60 ml (¼ cup)   rum (see note above)
To garnish:   sprig of thyme


1 Muddle all ingredients except rum to a bar glass or shaker.
2 Add rum and ice cubes to shaker, shake hard and fast, then strain into a coupe or martini glass. Float a sprig of thyme to garnish and serve.

Note For honey and thyme water, dissolve honey in an equal amount of hot water. Add a few sprigs of thyme and steep overnight to allow the thyme flavour to infuse.
