Iced tea

Iced tea

This recipe makes 2 litres of iced tea.

Serves 4



½ cup   tea leaves, such as Darjeeling
160 gm   caster sugar
To serve:   mint leaves and lemon slices


1 Bring 1.2 litres of water to the boil over high heat. Add tea leaves to a large teapot or heatproof container and pour over boiling water. Stand tea to steep for 10 minutes, then strain into a large jug and add 800ml cold water, sugar and mint, fill jug with ice and serve with lemon passed separately.
