Judging by his success in the Eternal City, Bavarian chef Heinz Beck would be entitled to repeat the same words today. Since he took over La Pergola in 1994, he has taken the restaurant to the top of the Roman culinary tree with dishes such as red mullet with rhubarb and oyster sauce and infusion of porcini mushrooms with quail egg and white asparagus.
