Garde Manger: The Art and Craft of the Cold Kitchen” 23rd & 24th June, and 7th & 8th July, 2012.
During this two day, hands on workshop, join us on the farm where you will learn how to make your own salumi - salami’s, sausages and cured meats using classical techniques in modern ways. You will also feast on our amazing produce for lunch on both of the days.
These workshops are run in small groups by Kenneth Neff from his Italian inspired farm kitchen. Kenneth honed his skills as an artisan charcuterie / salumi producer with extensive training from master charcuteriers locally and overseas. His passion for excellent quality, locally and ethically sourced ingredients ensure superior results every time.
