This is the restaurant du jour in Hobart. The prime waterfront position, proximity to some of Hobart’s better hotels, an extensive menu, sleek service and knock-out wine list make it a favourite watering hole for both locals and serious foodies. The emphasis at Marque IV is on the extraordinary produce of this little island state. The menu lists such delicious things as a spanner crab and smoked salmon scramble with hollandaise; confit of baby abalone; sashimi of Macquarie Harbour ocean trout with a squid ink risotto; and venison ragoût with beetroot and shallot tart, cauliflower purée and garlic mushrooms. Gin and lime tart seems to have replaced the famous variations on a theme of peanut butter as the fave dessert. But wait, there’s more: a tasting menu, matched to two flights of wines, a splendid and original vegetarian menu, and even a remarkably extensive gluten-free carte.
