So tables and chairs are rammed into every nook, the noise-levels in this low-lit dining room can be deafening, but that’s all part of its earthy, Iberian charm. Quick-smart service will have you gobbling that first fabulous croûton topped with anchovy and smoked-tomato sorbet before you’ve sipped your albariño, or another suitably Spanish wine from the exceptional list. In speedy succession, empty plates are whipped away and replaced with more tastes, perhaps squid-ink croquetas wrapped in a slip of calamari, or a coil of grilled veal tongue doused in a zippy green capsicum sofrito. A ración of Sherry-braised beef cheek and generous desserts such as the quivering caramel flan fill any gaps left by these teasingly tiny bites.
