Peter Gilmore, chef, Quay


One of the newer members of the top chefs’ club, Peter Gilmore nonetheless seems to have arrived with a fully articulated style that is all his own. Working at Quay restaurant overlooking Sydney Harbour, Gilmore incorporates cutting-edge technique with unusual produce, bringing them together on the plate with great artistry and an ineffably light touch.
