Ingredients

1 tsp demerara sugar syrup (see note)

30 ml gin

30 ml Amontillado Sherry

1 tbsp freshly squeezed lime juice

To top: ginger beer

To garnish: lime wedge

Method

Main

1.Shake all the ingredients, except the ginger beer, with ice, then strain into a goblet or highball glass. Fill with ice, top with ginger beer and garnish with a lime wedge.
