Paul Carmichael's great cake

"Great cake, also known in Barbados as black cake or rum cake, is a variation of British Christmas cake that's smashed with rum and falernum syrup," says Momofuku Seiobo chef Paul Carmichael. "This festive cake varies from household to household but they all have two things in common: tons of dried fruit and rum. It's a cake that should be started at least a month out so the fruit can marinate in the booze. Start this recipe up to five weeks ahead to macerate the fruit and baste the cake."

This has been adapted from a recipe by Jeffrey Morgenthaler of Clyde Common in the States.

You'll need

1 tsp demerara sugar syrup (see note) 30 ml gin 30 ml Amontillado Sherry 1 tbsp freshly squeezed lime juice To top: ginger beer To garnish: lime wedge

Method

  • 01
  • Shake all the ingredients, except the ginger beer, with ice, then strain into a goblet or highball glass. Fill with ice, top with ginger beer and garnish with a lime wedge.
Note To make demerara sugar syrup, combine two parts demerara sugar to one part boiling water, stirring until the sugar is dissolved.
