Dr Funk

For a party, The Cliff Dive's Alex Dowd recommends quadrupling the quantities and serving the drink in a bowl shaped like an active volcano ("think Dante's Peak"), topping up glasses with soda as you go.

You'll need

60 ml dark rum 20 ml lime juice (reserve the squeezed halves) 15 ml grenadine A dash of absinthe To top up: soda To garnish: mint sprigs and maraschino cherries

Method

  • Half-fill a tall glass with ice, add rum, lime juice, grenadine and absinthe and stir well to combine. Top up with soda, add reserved lime halves, garnish with mint sprigs, cherries and plastic monkeys or something similar and serve.
