“Greedy Bear” is the nickname of Alen Nikolovski, bartender at The Cliff Dive and Tio’s. (He also answers to “King Shaka”, though sadly that name is yet to inspire a cocktail.)

1.Fill a shaker with ice, add tequila, juices, maraschino liqueur and agave syrup, and shake hard and long. Taste for balance and adjust as necessary. Strain into a chilled stemmed glass and add a few drops of bitters. Garnish with pineapple leaves and mint sprigs and serve.
