Open prawn sandwiches with anchovy mayonnaise

You'll need

225 gm (¾ cup) mayonnaise 4 anchovies, finely chopped ½ garlic clove, finely chopped Finely grated rind and juice of 1 lemon 8 thick slices seeded sourdough bread 1 baby cos, leaves separated, torn 1 baby fennel bulb, thinly sliced, placed in iced acidulated water 24 medium cooked king prawns, tails intact

  • Combine mayonnaise, anchovies, garlic, and lemon rind and juice in a bowl, and season to taste. Spread bread slices with a little anchovy mayonnaise, top with lettuce, drained fennel and prawns, season to taste and serve drizzled with extra anchovy mayonnaise.
