1.Freeze sirloin until semi-frozen (2 hours). Remove from freezer and slice as thinly as possible (about 2mm thick) across the grain. Arrange on serving plates, finely grate horseradish over top with a Microplane, scatter with sea salt flakes and micro celery and serve.

Note Micro celery is available from select greengrocers.
