Grilled apricot salad with jamon and Manchego

Here we've scorched apricots on the grill and served them with torn jamon, shaved Manchego and peppery rocket leaves. Think of it as a twist on the good old melon-prosciutto routine. The mixture would also be great served on charred sourdough.

Chorizo recipes

Where would Spanish cuisine be without the chorizo? This versatile smallgood lends its big flavours to South American stews, soups, and salads, not to mention the ultimate hot dog. Let the sizzling begin.

2017 Australian Hotel Awards: The Winners

Every year, we produce the Australian Hotel Guide to scout the country for the very best in hotels: from city to country, coast to coast, club sandwich to club sandwich. We check into reviewed hotels anonymously and pay our own way. What we experience at these top Australian addresses is the same as what you, our readers, would experience. No special treatment; no added extras. Just honest, informative reviews of the best hotel experiences around the country. It's time to get packing. Pick up a copy of our 2017 Hotel Guide with our June issue, out now.

Jamón and pasta soup with mint (Sopa de picadillo)

You'll need

2 tbsp olive oil 200 gm jamón, finely chopped 6 garlic cloves, thinly sliced 2 litres (8 cups) good-quality chicken stock 160 gm fideos (see note) 10 eggs, at room temperature Small handful of mint, coarsely chopped

Method

  • 01
  • Heat olive oil in a large saucepan over low heat, add jamón and garlic and stir occasionally until very tender (6-8 minutes). Add stock, bring to the simmer, add pasta and simmer, stirring occasionally, until al dente (6-8 minutes). Season to taste and keep warm.
  • 02
  • Meanwhile, cook eggs in a saucepan of boiling water until hard-boiled (8 minutes), drain and set aside to cool. When cool enough to handle, peel, coarsely chop and set aside.
  • 03
  • Divide hot soup among bowls, scatter with egg and mint and serve.

Note Fideos (a type of Spanish noodle) are short lengths of thin, round pasta. They're available from select Spanish delicatessens; if they're unavailable, use spaghettini broken into roughly 5cm lengths.

"This is a true Spanish Christmas classic," says Camorra. "It's a very humble soup: usually a chicken broth with diced pieces of egg, jamón and a little bit of pasta, like a short angelhair, and it's finished off with a picada of egg and mint."
