What the GT team is cooking on Christmas Day

We don't do things by halves in the Gourmet office. These are the recipes we'll be cooking on the big day.

Sydney's best dishes 2016

For our 50th anniversary issue in 2016, we scoured Australia asking two questions: What dishes are making waves right now? What flavours will take us into the next half-century? Sydney provided 16 answers.

Paul Carmichael's great cake

"Great cake, also known in Barbados as black cake or rum cake, is a variation of British Christmas cake that's smashed with rum and falernum syrup," says Momofuku Seiobo chef Paul Carmichael. "This festive cake varies from household to household but they all have two things in common: tons of dried fruit and rum. It's a cake that should be started at least a month out so the fruit can marinate in the booze. Start this recipe up to five weeks ahead to macerate the fruit and baste the cake."

Summer feta recipes

Whether in a fresh salad or seasonal seafood dish, feta's creamy tang can be used to add interest to a variety of summer dishes.

Mango recipes

Nothing says summer like mangoes. Go beyond the criss-cross cuts - bake a mango-filled meringue loaf with lime mascarpone, start off the day with a sweet coconut quinoa pudding with sticky mango, or toss it through a spicy warm weather Thai salad.

Christmas ham recipes

The centrepiece of any Christmas feast, hams can be glazed with many ingredients. Here are our favourite combinations.

Potato, coriander and egg curry

It's really important to use a waxy potato for this dish so it holds together and presents beautifully. This is excellent served with a battery of Indian chutneys and relishes.

You'll need

675 gm small waxy potatoes, such as kipfler, scrubbed 1 tsp each ground coriander and ground cumin ½ tsp cayenne pepper ¼ tsp ground turmeric 4 eggs 60 ml (¼ cup) vegetable oil ½ tsp each cumin seeds and brown mustard seeds 2 dried long red chillies 2 tsp finely grated ginger 60 ml (¼ cup) tomato passata 2 tbsp thick natural yoghurt 1/3 cup (loosely packed) coriander To serve: steamed rice

Method

  • 01
  • Bring potatoes to the boil in a large saucepan of lightly salted cold water over medium-high heat and cook until just tender (12-15 minutes). Drain and cool slightly, then peel and cut into quarters. Combine in a large bowl with ground coriander and cumin, cayenne pepper, turmeric and 1½ tsp sea salt and gently mix to combine.
  • 02
  • Cook eggs in a saucepan of boiling water for 5 minutes, then drain and refresh in cold water. Peel eggs and halve lengthways, then set aside.
  • 03
  • Heat oil in a large frying pan over medium-high heat, add cumin seeds, mustard seeds and chillies and stir occasionally over medium heat until mustard seeds begin to pop. Add ginger and stir to combine, then add passata and cook, stirring occasionally, until mixture has reduced by half (2-3 minutes). Add potato mixture and 350ml water, stir to combine and bring to the simmer, then cover, reduce heat to low and cook until potatoes have warmed through (15-20 minutes). Add eggs and cook until eggs are warmed through (2-3 minutes).
  • 04
  • Combine yoghurt and 80ml cooking liquid in a small bowl, then add yoghurt mixture to curry and stir to combine. Remove from heat, season to taste, scatter with coriander and serve hot with steamed rice.
