Feta and greens gozleme

A lot of rolling and folding go into making this Turkish flatbread, but when you bite into them all the hard work will be forgotten. The traditional filling is silverbeet, but we've added kale and fresh herbs for fragrance and flavour. A good sprinkle of salt at the end and a squeeze of lemon are non-negotiable. Start this recipe a day ahead to rest the dough.

Insalata Caprese


Well-loved for good reason, this super-simple salad can't be beaten. Get the ripest tomatoes and best buffalo mozzarella you can find.

You'll need

1 garlic clove, bruised 600 gm oxheart tomatoes (about 4), thickly sliced 1 buffalo mozzarella (about 250gm), coarsely torn 1 cup (loosely packed) basil For drizzling: extra-virgin olive oil

Method

  • 01
  • Rub serving platter with garlic. Arrange tomatoes and mozzarella on platter, scatter with basil, season generously to taste, drizzle with olive oil and serve.
