It’s not a glam location, on the corner of a busy Surry Hills street, but once you’ve made your way indoors you’re in for a thoroughly enjoyable experience. The room is snug and can be boisterous, but the décor is slick and modern, and the food matches it with emulsions, gels and smears of intensely flavoured sauces. The balance of taste, texture and artistry is skilfully choreographed in a terrine of rabbit with foie gras and toasted hazelnuts, and a beautifully crisp-skinned Cone Bay barramundi with light pillows of saffron gnocchi and a mussel emulsion. To finish, a nectarine parfait with strawberry tapioca, berries and raspberry sorbet rocks the palate. With polished service and a wine list that stretches from the Barossa to Bordeaux, little wonder Assiette remains a crowd-puller.
