The presence of liquid exotica such as Jura reds and locally made amari suggest serious intent at Bar Liberty, which chimes with the starry pedigree of its three co-owners who work the floor, formerGTSommelier of the Year Banjo Harris Plane and his fellow Attica alumni Michael Bascetta and Manu Patoi. But what, then, to make of the scale models of classic cars filled with Jim Beam? Or, for that matter, the offer of a GLT, an admittedly mighty tasty kosher BLT packing crisp chicken skin, lettuce and tomato between sliced white? Could these light, sparely decorated rooms be places where wine might be fun? Casey Wall's menu comes to the party. Pipis in XO are undone by a bit too much grit, but fermented buttermilk makes a fine foil for cured scallops, and corn-on-corn-on-corn with risoni is flavour cubed. Bar Liberty isn't quite so tightly run as some of its fellows in the wine-bar new wave but remains a force to be reckoned with.
