The sign out the front is just the previous owner's shingle, graffitied. Whiskey comes in a model Ford Thunderbird. The GLT (a BLT with chicken skin) has its own cult following. Yes, Bar Liberty is the go-to joint for gonzo libations and none-too-serious snackage, all wrapped up in a package that's more iceberg than the frivolous tip might suggest. Chips 'n' dips? Try a potato crisp with emulsified mussel, pickled onion and lovage powder. Bread? Try toasted sourdough with a melting scoop of butter curd and a pair of scissors. Tempura salt and pepper vegetables are the tastiest way to consume your daily serve; steak tartare gets a spicy nudge from 'nduja; and a comfort-heavy dish of pipis in XO with savoury Chinese doughnuts comprise one of chef Casey Wall's worthy excursions to the Asian side. Add a wine list that's natural but nice and you've got a juke joint that's catnip to the hospitality crowd and adventurous drinkers.
