When a restaurant's very name references diversions, you'd expect it to eschew the straight and narrow. Detour doesn't disappoint. A share plate of salmon fillet comes scattered with citric black ants and seasoned with edible gunpowder - the charcoal mix creates a theatrically blackened edge to a perfect shell-pink fillet. Emu makes the cut in a tasty, trend-conscious tartare - with dill, smoked habanero salt and a caramelised spring onion dressing kicking everything up a notch. A nifty wine list (featuring a slew of low-volume producers that are mainly Australian) impresses, as does the heritage-listed venue's multi-textured interior, all timber feature walls, burnished copper and steel girders. Service is breezy, but staff are primed to explain intricacies - handy when dessert is vegan meringue made from chickpea and cashew syrup, then cooked in liquid nitrogen and layered with almond cream and textures of basil. Here's to the road less travelled.
