An understated room, engaging service and a light-on-its-feet wine list highlighting home-grown and offshore artisan makers play impeccable support act to the chef's exciting dégustation menus. It starts with a series of cult-worthy snacks. Crisp chicken skin topped with taramasalata and scampi roe, cured magpie goose wrapped around grissini, and fried saltbush dusted with vinegar powder all make for a great overture. They also outline Turner's approach - clever, nuanced combinations with fun and flavour at heart. The wood grill is a key player. Grilled cod with charred cabbage served with a marron and yabby sauce is sensational, while a wallaby tartare with shavings of egg yolk is completed by smoked celeriac.
