Classic Italian dishes are given new life: stuffed zucchini flowers are crumbed with pistachio, buffalo agnolotti is lifted by confit tomatoes, basil and stracciatella, and a smoked duck breast and baked duck leg dish is creatively flavoured with cocoa beans and cherries.
