Hidden away in Collins Place under the soaring five-star Sofitel, Kenzan is still dishing up standout sushi and sashimi more than three decades on. But vibrant cuts, careful cooking and artful plating in this elegant Japanese eating house go beyond the sushi master's craft. Think sublime ebi shumai - delicate steamed prawn dumplings rolled in soft egg noodles - or meltingly tender, miso-caramelised butterfish that's sweetly charred from the grill. Or glossy teriyaki Angus porterhouse with the buttery richness of wagyu. Something sweet? Well, sweet-savoury. How about a classic green tea brûlée or black-sesame ice-cream? A well-edited, nicely priced, East-West drinks list rounds out the experience. And wherever you are - by the busy sushi bar, behind the discreet tatami screens or waiting on tableside nabemono in the softly lit, sepia-toned dining room - the polite floor staff all aim to please.
