Confidence and ambition drives the menu at Penfolds' elegant winery restaurant - challenging the brand's best wines in thought-provoking and exciting ways. Chef Scott Huggins' energetic pursuit of fresh ideas has spawned Project Night menus each Wednesday (four courses for $100) to introduce clever and memorable creations. Some now appear within the standard dégustation, the irresistible snack of king prawn tail inside a fried chicken wing, for instance. Rare slices of aged Aylesbury duck breast with pear pickled in ginger beer are boldly matched to cabernet shiraz with great success. Invest in the "luxury and icon" package for superior older vintages from Penfolds' cellar - headed by Grange, teamed with heavily marbled Mayura Station wagyu striploin grilled over redgum coals. Discreet staff ensure a calm tempo to the meal, while an elevated view over vineyards to the city from leather wingback chairs adds to Magill's rarefied feel.
