The beachy jet-set fantasy conjured by the boutique likes of Halcyon House often comes undone at the table. But Paper Daisy doubles down on the magic, perfectly in tune with the blend of poolside ease and inspiration that makes this hotel such an intoxicating treat. At breakfast, pancakes are leavened with kefir, and whole-wheat crumpets freight honeyed grilled banana. Seafood is a must at any time of the day: cured moonfish “ham” between crisps of house-made rye bread is a stand-out among a salvo of dazzling snacks, while a special tames the smoky richness of grilled mackerel with a smooth chickpea purée and a mixture of pickled and fresh cucumbers. Tropical fruit and herbs perfume the menu, not least in a sapote sorbet with toasted buckwheat and jackfruit. Wine and service are en pointe. Make the detour, savour the reward.
