Paper Daisy

Chef Ben Devlin gathers intriguing ingredients and techniques with the same élan Paper Daisy's designer Anna Spiro collects fabrics and evocative memorabilia. In both cases, the results are far greater than the sum of the parts - arresting and memorable. Tiny prawn legs, king prawn morsels and a garum-style fish sauce made using prawn heads and shells helps to imbue a bowl of rye noodles with flavour for days, with chunks of fermented tomato to keep the richness in check. Sweetly sour kiwano seeds and wood sorrel add citric edge to scorched beef fillet, enriched with a creamy pumpkin-seed paste, sprouted grains and big-flavoured bresaola style wafers. At dessert, macadamia milk perfumed with anise myrtle gives depth to jackfruit sorbet and persimmon. It's clever, complex stuff and staff are primed to explain the back story. A suitably summery wine list with a nuanced sparkling line-up adds to the celebratory vibe.
