Don't be fooled by the seeming brevity and simplicity of Racine's menu. Chef Shaun Arantz has turned a tin shed in the middle of a vineyard into a vibrant regional dining destination that speaks loudly of its surrounds. Though "quail breast, witlof, sultana, chicken-liver parfait, chickpea" may read like a shopping list, the dish that arrives is much more than the sum of its parts, the quail caramelised and tender alongside a smooth, rich parfait and sticky dabs of sultana purée. Lamb rump sourced from Cowra and served with goat's curd, zucchini and white beans is a triumph of clean, fresh-picked flavours. Surprises reveal themselves at every turn: an amuse-bouche of onion and carrot gazpacho here, popping candy hidden in a dessert of rhubarb, peach sorbet and pecorino there. Service is knowledgeable, especially when it comes to the local wine list, which features some beautiful cool-climate drops.
