How does a kitchen compete with the finest ocean views on Australia's east coast? At Rick's, the answer is with élan - and an impressive raft of inventive, meticulously finessed share dishes. Interiors at this waterfront hotspot have a cool British Raj-meets-Ralph Lauren sensibility, but you may be too preoccupied to notice, instead focusing on your crab miang, or hot and sour bug roll, the soft bun crammed with tempura-battered Queensland bug meat and sriracha-spiked kaffir lime mayo. A cliché-free drinks list fields copious riesling, Rhône and rosé inspiration, plus some tidy Champagne and cocktail inducement - you'll want to party. Service is genial, if occasionally harried. Slow the pace with egg net salad, a rustic jumble of cuttlefish, pork belly, mint and green mango, or beef tartare boosted brilliantly with massaman spicing. Mango, kaffir lime meringue and sticky rice ice-cream is a cool rejig of a classic, which chimes sweetly with the overall offer.
