"Think of this dessert as a deconstructed version of a summer pudding, with thinly sliced strawberries macerated in elderflower liqueur and layered between slices of brioche," says Stone. "A dollop of whipped cream on top is a cooling counterpoint to the floral flavours."

Freshly cut roses from the garden, blushing mangoes lined up on the kitchen pass, and the boom and spray of the surf making their way over the road from the beach: light, bright and human in its scale, Sean's is the epitome of Bondi dining. (The prices, too, are also very Bondi.) There's an ease to the cooking and the smiling, genuine service here that comes from decades of experience, and a sunny confidence that matches the setting. Gentle twists and superb sourcing give the produce-driven plates a luxury born of flavour and freshness rather than excess. Marron in place of prawns in a crisply dressed cocktail of watercress, avocado and iceberg, for instance, or salted mackerel and the briny crunch of sea succulents accenting meaty north-coast albacore. Breezy it may be, but care is taken with the details: wine leans local and classic, and perfumed nectarines with vanilla ice-cream and raspberry jelly close a meal in rare style. Sublime.
