If any restaurant in Perth defines "modern Australian", St Michael is it. A winning mash-up of meticulous fine dining and Aussie nostalgia, dinner here feels like nanna's pantry gone Michelin. The menu isn't exactly printed in green and gold, but two mouthfuls into a generous bowl of cauliflower risotto topped with capers and suddenly it hits you: cauliflower cheese. Butter whipped with a hint of Vegemite is another childhood jackpot, as are the new-school honey joys - crunchy cornflake clusters alongside airy parsnip sponge accented with honey. There's a worldly awareness at play here, too, from cod with grilled corn salsa and pickled tomato to European selections on the well-pitched wine list. Although awkward lighting can make the space feel stark in the evenings, attentive waitstaff do a sterling job of making guests feel at home. The bargain-priced $89 dégustation, meanwhile, is another win for diners.
