Removed from its Melbourne home, transposed to a glam, breezy room on the Brisbane River, what does the Stokehouse brand stand for? In the main, light, bright, good times for the diner made possible by plenty of hard work behind the scenes. The group's investment in training means service is consistently a cut above, and it's the sort of restaurant where you can order vin jaune as an apéritif confident your waiter knows what you're talking about. Quail done in a sort of Kiev style, garlic-buttered, sauced with celeriac velouté and cut with pickled shallots, signals this is a kitchen that balances the odd playful idea with confident cooking. The pasta underpinning fettuccine teamed with duck sausage and Brussels sprouts is a little workman-like for this price-point, but the addition of pickled yellow chillies is as inspired as it is unexpected. Roast pineapple, passionfruit ice-cream and mint Chantilly take you out on a high.
