The Dolphin Hotel

A restaurant that puts Henry Rollins quotes on its menu and has guests wearing "Fuck the Future" T-shirts sounds like it should be approached with caution, but the multi-space reimagining of The Dolphin (a formerly bloodless Surry Hills boozer) deserves uninhibited embrace. The food, wine and service are elevated beyond anything you'd expect behind a noisy pub façade, and prove again that Icebergs' Maurice Terzini and Monty Koludrovic are unstoppable. Stop by the main dining room for a puffy-crust pizza laced with Italian greens, mushrooms and olives, or fish roasted whole with sorrel and herb butter. If you'd prefer to graze  on salumi and drink from a list of 35 wines by the glass and over 150 by the bottle from sommelier James Hird, hit The Wine Room. Need somewhere for easy after-work drinks? They've retained the pub bit, too - just one that has the red stuff pumping through its veins again. Rollins would approve.
