Floaty dresses, tanned limbs and thongs - Bronte's Three Blue Ducks have feathered themselves a rustic, fun and appropriately stress-free nest in the stunning surrounds of The Farm outside Byron Bay. An on-trend wine list is dotted with organic and bio options, and there's kombucha and craft beer on tap. Sure, it's a taste of the good life for townies, but the allegiance to sustainable and seasonal is dinky-di, with the diner focus directed out to the paddocks rather than on the tin-shed décor. Line-caught mackerel, skin bronzed, flesh juicy, comes with grilled asparagus and hazelnut purée, zinged up with preserved lemon and toasted rice. Clarence River school prawns are loaded with red chilli and lime, a spicy kimchi mayo at hand for dipping. Crowd-pleaser desserts display the same nuanced care - salty meringue and rum caramel elevate Eton mess. Adept, genetically blessed staff seem so happy you may want to ditch your job and join the cult.
