In the lead-up to the previous edition of the Gourmet Traveller Australian Restaurant Guide and the announcement of our Restaurant of the Year, we sat down with the chefs who were awarded three stars in the 2008 edition of the guide to talk to them about what it is that they do, and why they do it. With this year’s awards just around the corner, we thought it was a good time to revisit what the nation’s leading chefs had to say.
