Our restaurant critics’ picks of the latest and best eats around the country right now: The Shorehouse, Perth.

Swanbourne mightn’t have the same pull as Perth’s better-known beaches, but expect that to change following the opening of The Shorehouse. The newest venture from Scott Taylor of The Trustee, Beaufort Street Merchant and Enrique’s School for to Bullfighting fame, this airy, whitewashed dining room remains true to Taylor’s smart-casual credo, thanks to the equally accessible cooking of Oliver Gould, late of Melbourne’s Stokehouse. Baby basil and fine shavings of bottarga adorn raw tuna, while a bed of crunchy romesco sauce cleverly brightens beef tartare. The cooked stuff is equally notable: meaty, charcoal-roasted Exmouth prawns smoky from the Josper oven are a fun throwback to summer barbies past. The restaurant is still in soft-opening stage so the deck menu (lobster sandwiches!) isn’t operational quite yet, but even this early in the piece, The Shorehouse looks set to be a popular hang-out this summer.
