The Mayfair Hotel has opened its Hennessy lounge (once intended to be exclusive to guests) to the public, which means Adelaide’s CBD has another rooftop bar to play with, just in time for summer. General manager Martin Radcliffe realised the glamorous loft and deck, perched high among the grand Romanesque building’s stone gargoyles, was being underutilised, and he now opens the bar nightly from 5pm. The Hennessy bar, named after the building’s original architects not the Cognac, presents an extensive Champagne list and such signature cocktails as the #45, a pineapple-rum sour. An hors d’oeuvre menu prepared by the hotel’s Mayflower Restaurant continues chef Bethany Finn’s playful take on retro hotel fare, offering smoked oysters, vol-au-vents and the signature cheese fondue. Be there at sunset for magnificent city views.
