Our restaurant critics' picks of the latest and best eats around the country right now: Lilo Tang, Canberra.
Japanese fine-dining meets izakaya raffishness in a modern space of movable birch timber walls and stencilled anime images? It sounds like a recipe for confusion, but has proven so far to be a popular formula at Lilo Tang - the latest project from the crew behind The Chairman and Yip, Lanterne Rooms and Malamay. Chef Shunsuke Ota displays knife skills acquired at Nobu, but cuts loose here with a brand-new robata grill fired with binchotan charcoal. Pork belly yakitori skewers are a standout - the tender, melt-in-the-mouth morsels coated in a spicy sauce of miso and the fermented, citrus flavours of yuzukosho seasoning. There's plenty of quick snack options, including gently smoked eggplant served cold in a sesame dressing. And for drinks, it's all about the sake list - 22 in total.
