From the trullo motif to the name (it means tailor, a reference to this smart space’s past life as a rag-trade warehouse) and the sassy waiters, Sarti is Italian in manner and menu. This upstairs dining room of bentwood chairs and central bar harbours a surprise terrace amid the skyscrapers. Riccardo Momesso’s tempting menu starts with stuzzichini offerings such as polenta-dusted calamari with a giardiniera of pickled cauliflower and homemade pasta such as potato and truffle-filled ravioli coated in a rich veal ragù. Main course staples including myrtle-scented suckling pork are bolstered by a daily game dish – perhaps quail stuffed with prunes and Italian sausage in a heady prosciutto consommé. The wine list highlights well-priced Australasian vintages and savvy Italian varietals. Desserts aim high with the Monte Bianco, a peak of white chocolate-coated chestnut cream with a fantastic whisky ice-cream.
